Our main meat source is chicken. So... we eat a lot of chicken.
Chicken Enchiladas.
Fajitas.
Chicken Salad.
Chicken Quesadillas.
Chicken Noodle Soup.
Chicken Pasta.
Repeat.
I used to use a lot of canned chicken because it was so convenient. But I found something that works even better for me...
... and it's no big secret.
I slow cook 3-5 lbs of frozen chicken breasts, shred it then use it/bag it for later.
More specifically, I put the 3-5 lbs in the slow cooker, and fill the water to ALMOST covering the chicken and then add about 1 tablespoon of salt and a tsp of garlic salt for a little flavor.
I usually cook it on slow over night or 8-10 hours.
Shred the chicken and put about 1 lb in a ziplock bag and refrigerate for later use.
(and if you want to, you can save the "broth".)
That's it.
And it's yummy!
We used some for fajitas last night!
