Enchiladas, Corn Dogs and Banana Muffins

So, I slow cooked frozen chicken breasts on low for almost 2 whole days - and it's so dang good (I may have picked at it this morning before bagging it up). I made Enchiladas last night, using Weelicious' Mexican Enchiladas recipe, and tried it with Green Chile Enchilada Sauce AND Red Sauce. I used whole wheat tortillas AND flour (my husband prefers flour tortillas) aaand...

the flour + green chile sauce was most preferred by me, the 5 year old and the 2 year old. My 7 year old wouldn't eat dinner last night because he was in a mood and my husband doesn't count because he didn't try the red sauce. :) My one year old eats whatever we put in front of him, so he scarfed the red sauce.

So that's that. Green Chile Sauce from now on for us. I'll probably still use whole wheat and flour tortillas to keep everyone happy.

I use Weelicious' recipes a lot.

In fact, I made two more of her recipes today.

Corn Dog Muffin Bites
(I just used a corn bread/muffin mix, and turkey dogs)

and

Banana Chocolate Chip Muffins
(I doubled the batch for this one because it's that good)


It may seem like a lot of cooking for one day and it is more baking then I normally do, but my boys love corn dogs so we had them for lunch, and I've been letting some of our bananas get really ripe just so I could try this recipe.  Aaaaannd its the weekend so I figured the muffins could be a treat (did I mention that they're freaking delicious?!)
